    This course provides specialist training in pastry for those wishing to pursue a career as a specialist chef undertaking a team leading role in a commercial kitchen. Areas of study include: Administration, Customer service, Food handling, Food safety and regulation, Leadership, Marketing, Patisserie, Restaurant operations, Stock control; and, Supervisory skills.

    Entry requirements: Year 12 (VCE) or equivalent, or mature age entry also considered, or relevant industry experience.

    Applying and Enrolling

    To enrol at Chisholm, you need to apply, and then be accepted. Procedures to apply for courses vary. A TAFE application may go through VTAC, for example. In other cases the application may be direct to Chisholm or through your employer or school.

    With a successful Chisholm Institute of TAFE application, in some cases,  you may need to attend an information session or submit a portfolio prior to completing your enrolment.
